CHAPEL HILL, N.C., June 25, 1999 -- Blue Cross and Blue Shield of North Carolina suggests the following tips to help make your summer cookouts safe and healthy.
  • Keep perishable items, such as salads, meats and dairy products cold until you are ready to use them. Store them in sealed containers to prevent insects from getting in.
  • Place foil on the grill below cooking meat to minimize exposure to smoke, and wrap vegetables and fish in foil for the same reason. Smoke and charcoal create compounds that may cause cancer; so it's best to reduce their exposure to your food.
  • Never leave a burning grill unattended. And finally, enjoy!
